Award winning cheesemaker Daniel Jenkins only started making cheese in 2011, yet he’s now at the forefront of a new wave of artisan producers in New Zealand. 

With no background in cheesemaking or farming whatsoever, moving to Kaikoura to start a farming and cheesemaking business has been a steep learning curve for Daniel and his family. Since scoring 100/100 at the New Zealand Specialty Cheese Awards in his first year of business, Daniel has since gone on to pick up twelve awards, for both his goats and cows cheeses. While establishing Kaikoura Cheese, Daniel and his wife Sarah and their two daughters Pipi and Coya built a ten-square-metre house in Kaikoura, living in it for eighteen months. Five years on Daniel makes some of the best cheese in New Zealand right in the centre of Kaikoura.

This course is designed to entertain, to inspire, and to feed you, giving you a set of skills you can use at home.

Cheesemaking & Gastronomy with Kaikoura Cheese

Study the basics of home cheesemaking in the relaxed environment of the Cloudy Bay Treehouse. Learn simple recipes using tools you’ll find at home, demystifying the secrets of this wonderful alchemy. The three hour journey starts with the hands-on process of cheesemaking, focussing on Tomme, a very adaptable semi-hard cheese. The cheesemaking then leads to a gastronomy and sensory section, tasting different cheeses and pairing them with food. The last hour features a talk from one of the wine specialists from Cloudy Bay, as we match cheese with their wonderful cellar selection.
